Winter is already here! Our body needs hot foods to raise the temperature, but be careful not what they are, we need seasonal foods and above all we need to prepare them as healthy as possible! A challenge on our level as we’ve found 4 healthy soup recipes for you to help you cope with the cold weather! To your stoves!
1. Pumpkin soup

Ingredients:
- 500 g pumpkin
- 2 shallots
- 1 hot pepper
- 500 ml of coconut milk
- 1 lemon
Cut the pumpkin into cubes. Peel the shallot, remove the stem from the pepper and cut it in half. Remove the seeds. Finely chop the shallot and chilli. Bring the coconut milk to a boil, add the pumpkin flesh, shallots and season. Simmer for 10 minutes, then stir. Put back on the heat, add the lemon juice and stir well. Serve hot.
2. Spicy coral lentil soup

Ingredients:
- 150 g of coral lentils
- 1 carrot
- 1 tomato
- 1 onion
- 1 clove of garlic
- 1 little olive oil
- cumin
- paprika
- Espelette pepper
Rinse the lentils, then drain with a colander. Wash one carrot, one tomato and one onion. Peel the carrot and onion; cut the tomato. Peel and chop a clove of garlic. Pour a little oil into a saucepan and add the carrot, tomato, onion and garlic and season. Stir and add the red lentils with the cumin, red pepper and Espelette pepper. Stir, add 1 liter of water and simmer for 20 minutes. Stir and place the pan back on the heat. Serve hot!
3. Chestnut soup

Ingredients:
- 600 g of chestnuts
- Olive oil
- 2 onions
- 3 carrots
- 1 stock cube
- 150 ml of liquid cream
- thyme
Bake the chestnuts in a tray for 15 minutes at around 200°C. Put oil, two onions and three carrots in a pan. Heat the stock cubes in 1.5 liters of water, stir in the chestnuts, onions, carrots and half the stock. Mixer. Reheat the mixture with the other half of the broth and simmer for 20 minutes. Add the heavy cream and salt. Add cream to each bowl and sprinkle with thyme.
4. Sweet potato soup

Ingredients:
- 250 g leeks
- 500 g of sweet potatoes
- 15 cl soy milk
- nutmeg
- 1/2 stock cube
- butter
- parsley
Chop the leeks and sweet potatoes. Chop the parsley. Melt the butter in a pan and add the leeks. Fry the mixture for 3 minutes on low heat, add the sweet potatoes. Wait 5 minutes and add 1 liter of water, then season. Add the nutmeg, stir and simmer for 30 minutes. Add half the stock cubes, stir and cook for 3 minutes. Stir the mixture, then return to the heat. Gradually add the soy milk and parsley.
