I avoided soup for a long time. I thought it was a boring dish, too bland for my taste buds craving texture and crunch.
Then I learned to… make soups. BAH SAY SO. I thought about it!
So here are 3 soup ideas that make me happy in bidua and should make you happy too!
The chicken soup like in the movies
This is a classic of American films and series: heroes, when they are ill, gorge themselves chicken soup. I ended up being curious and tried making one myself.
Verdict? I WANT TO EAT IT EVERY FUCKING DAY GOD MADE.

The ingredients of a chicken soup for 2 people
- 2 chicken legs or drumsticks, preferably with the skin on
- 1 carrot
- 1 stalk of celery
- 1 small onion
- 2 cloves of garlic
- 2 cubes of chicken stock
- 800 ml of water
- 100 g of noodles or vermicelli
- Salt pepper
- Oil (sunflower, rapeseed, olive, etc.)
- Other possible spices and herbs: turmeric, paprika, cumin, coriander, parsley…
As for utensils, you need a pot or large pot, a cutting board and a peeler. Easy, I tell you!
Recipe of chicken soup for 2 people
- Heat some oil in the pan
- Add the chicken pieces, skin side down, seasoned with salt and pepper (and other seasonings if desired)
- During this time, peel and cut the carrot, onion, garlic and celery into 1 to 2 cm wide pieces (for crokan)
- After 5 minutes, turn the chicken and grill the meat for another 5 minutes
- Remove the chicken pieces and place them on a cutting board
- Meanwhile, place the vegetables in the same bowl
- Cut the chicken into small pieces (5 to 7 cm), remove the meat from the bones
- Place the chicken back in the pot, with the bones (adds flavor!)
- Add 800ml of water and the 2 bouillon cubes that you mix with a spatula
- Simmer for at least 20 minutes, on low heat and covered.
- Taste the broth to make sure nothing is missing, then add the noodles
- Let it boil for another 5 to 6 minutes (depending on the cooking time of your pasta)
- Turn off the heat, remove the bones and pour everything into two large bowls!
You end up with a very rich and delicious soup, vegetables and melting chicken… it’s just as comforting as it should be, my mouth is watering just thinking about it.
And in a vegetarian version?
I’m having trouble finding it vegetarian/vegan alternative to this recipe because the chicken makes the broth rich and gives it the characteristic poultry flavor.
However, this recipe works with vegetable stock, grilled “mock chicken” (made with seitan, for example), and potatoes for richness. Should I test? You will tell me about it!
Simple vegetable soup
It is this recipe, mainly tested to finish off my halves in the vegetable drawer, that reconciled me to soup.
It’s vegetarian, not expensive at all (especially if you have an accessible market or primal), and you can prepare everything before an episode of Bodyguard on Netflix! What more ?

by itself, you can use whatever you want as long as the combinations work (zucchini-leek-pumpkin, that might be daring). Here’s what I wore last time!
- ½ pumpkin
- 2 carrots
- 4 potatoes
- ½ sweet potato
- 2 stalks of celery
- 4 cloves of garlic
- 1 onion
- Salt pepper
- 2 cubes of vegetable broth
- 1 liter of water
- Other possible spices and herbs: turmeric, red pepper, chili pepper, bay leaf, thyme…
Vegetable soup recipe for 2 people
- You peel everything
- You cut everything into roughly equal pieces
- You put in your pot
- Add water until the vegetables are submerged
- You put the broth
- You light the fire and wait (about 40 min.)
