How to make vegetable soup?

Vegetable soup is one of the most famous seasonal dishes of the French. Ideal for warming up, it can be customized according to the selected products. Here’s a simple recipe to highlight these garden staples.

Both in summer and winter, the soup is considered healthy with real nutritional qualities for the whole family. It’s also a way to make it easier for kids to eat vegetables. On the other hand, with a very low calorie intake and a great feeling of satiety, this soup is considered excellent for health. It is also an ideal dish when you want to watch your figure.
Whatever the recipe chosen, the choice of products is absolutely crucial, as the freshness of the food determines the success of your recipe. Contrary to popular belief, it is not recommended to use old products: the taste and nutritional qualities will be affected.
The dish can be served as an appetizer or as a main course depending on the amount of vegetables and the side dishes chosen. As an appetizer, it can be raw, where you can add starch or protein to a dish that will be a main course.

2 leeks
2 potatoes
2 carrots
1 turnip
1 onion
olive oil
salt and pepper

Start by washing all the vegetables. Rinsing them with clean water reduces the number of microorganisms and removes any traces of pesticides.
Then cut them into small pieces so that they are all the same size. The small pieces are perfect for making your future mix. Be sure to cut both ends of the leek well: the root and the tip of the green leaves. For the onion, you can finely chop it.

In a large pot, add a little olive oil to fry the onion, leek and turnip for 5 to 6 minutes over low heat. Sauteing your vegetables on low heat brings out their flavor. The seasoning is up to you.

Add the potatoes and carrots to the pot and cover with cold water. Start cooking again until it boils. Cook for 30 minutes, stirring the mixture regularly. Your potatoes and carrots should be very tender to save time when blending.

When all your vegetables are cooked, use a blender to turn them into a soup. Finally, you can add a little cream to thicken the soup if needed.

To improve your recipe, add the ingredients of your choice a few minutes before the start of cooking:
clove
Spices
bay leaves
pumpkin
Chicken or stock cube
Fresh cream for smoothness or to refresh if very hot when served

If the soup may seem a little light to eat, you can accompany it with other foods:

Grain bread
grated cheese
Poached egg, soft, fried in a pan…
Pieces of meat: bacon or poultry
