How should we proceed?
Coat the chicken pieces liberally with mustard, fry them in hot fat in a casserole, being careful not to burn the mustard. Remove them from the casserole, replace them with the sliced onions and melt them. Put the chicken pieces back on the bed of onions and cook on low heat for about 45 minutes. It is only lightly salted because of the mustard.
Heat the serving dish, place the chicken on it.
Add the cream and a spoonful of mustard to the pan, stir and leave the broth, then baste the chicken with this sauce and serve with steamed potatoes.
