Parsnip and chestnut soup

Ingredients:
– 400 g of parsnips
-10 chestnuts
-60cl chicken broth
-1 shallot
-40cl fresh cream
– Olive oil
-1 teaspoon of nutmeg
– A few pumpkin seeds
Preparation:
1. For this recipe, start by peeling the parsnips, then coarsely chop them. Put them in a pressure cooker and fry them in olive oil.
2. Next, slice the shallots and arrange the chestnuts before pouring the chicken stock over them. Leave to marinate for 15 minutes.
3. Cover your recipe with fresh cream; Do not forget to season with salt and pepper. Mix thoroughly. Add the nutmeg.
4. Feel free to taste to check the seasoning. Then serve, garnished with a few chestnuts and pumpkin seeds.

-2 boiled beets
-2 potatoes
– 1 half lemon
-2 cloves of garlic
-15cl fresh cream
– 80 g feta
– A few pine nuts
– basil leaves
Preparation:
1. For this cuisine, steam the potatoes; then remove the skin.
2. Then put them in the blender and add the beets that you previously cut into cubes. Pour in the lemon juice as well as the garlic and mix.
3. Then put the mixture in a saucepan and heat over low heat. You can add fresh cream.
4. Then serve your soup in bowls and garnish with some pine nuts as well as basil leaves.

-10 carrots
-1 knob of butter
– 1 head of yellow onion
-2 tablespoons of ginger
-5 cl coconut milk
– 40 cl of water
– A few sprigs of parsley
Preparation:
1. First put the peeled and cut carrots into a casserole dish.
2. Add the chopped onion and knob of butter. Allow to heat for 8 minutes.
3. Cover the recipe with water ladle by ladle and stir. Remove from the heat, add the ginger and let cool.
4. Add the coconut milk, then pour the velouté into a blender. Mix everything to get a homogeneous soup.
5. Serve in bowls. You can garnish with a few sprigs of parsley. Salt and pepper to your taste.

-1 pinch of ginger
-1 knob of butter

-2 tablespoons of turmeric
-10cl coconut milk

– Some croutons
Preparation:
1. For this recipe, boil the sweet potatoes and potatoes in a large volume of water. Once they are cooked, remove the skin and arrange them in a casserole dish.
2. Cook the chopped vegetables with a little oil and pour over the vegetable broth. Leave to marinate for 5 minutes.
3. Add the spices and coconut milk. Stir your cooking well.
4. Finally, divide the soups into bowls, decorate with chopped chives and a few croutons.

– 1 head of yellow onion
-40cl fresh cream
-1 large knob of butter
-1 bunch of dill
-1 teaspoon cumin
-3 cloves
Preparation:
1. To start this recipe, slice the mushrooms, then fry them in a large pot with a little oil and the chopped yellow onion.
2. Then, ladle by ladle, you can pour the vegetable broth, as well as the cloves. Leave to marinate for 8 minutes.
3. Second, add the fresh cream and mix actively. Sprinkle with cumin and dill.
4. Divide the soups separately and garnish with some mushrooms. Feel free to add salt to enhance the flavor of the soup.
Red lentil and curry soup

– 250g of coral lentils
-1 celery
-20cl tomato puree
– 1 half lime
-1 bunch of thyme
-1 teaspoon curry
-1 pinch of ginger
-90cl vegetable broth
– 1 head of yellow onion
-2 cloves of garlic
– Olive oil
Preparation:
1. First, heat the chopped celery in a pot and cover with olive oil. Add the chopped onion and garlic, as well as the curry.
2. You can add the tomato puree as well as the lime zest, ginger and curry. Stir. Then it is gradually poured with the vegetable broth.
3. Stir the soup well and continue to stir away from the heat. You can serve in soup bowls and garnish with thyme leaves.
Trick: You can also use green lentils, but they take longer to cook.
Pumpkin Bacon Soup

– 400 g pumpkin
-10 slices of bacon
-1 pinch of red pepper
– 50 g of grated cheese
– 10 g of almond puree
-1 head of onion
-10 g of sugar
-5 cl of water
Preparation:
1. First you can cut the onion and put it in the bottom of a pot. Pour the olive oil and put the red pepper. Allow to brown for 2 minutes.
2. Next, roughly chop the pumpkin and let it melt in the pot while adding the almond puree. Leave to cook for another 25 minutes.
3. Stir the mixture to mix them while sprinkling with grated cheese. Then place in the blender to blend the soup.
4. In a pan, fry the bacon with the sugar and water. Then arrange them on top of the soup. taste!
