RECIPE: Chicken soup, caramelized onions and orzo

Serves: 4 – Prep: 10 minutes – Cooking: about 20 minutes

ingredients

  • 2 chicken breasts, boneless, skinless, diced
  • 5 ml (1 tsp) thyme
  • 45 ml (3 tablespoons) olive oil
  • 250 ml (1 cup) white wine
  • 2 L (8 cups) low-salt chicken stock
  • 250 ml (1 cup) diced carrot
  • 15 ml (1 tablespoon) cornstarch diluted in a little cold water
  • 1 L (4 cups) spinach leaves
  • 250 ml (1 cup) cream 15%.
  • Salt and pepper to taste

caramelized onions

  • 3 onions, minced
  • 2 jalapeño peppers, diced (seeds and white skins removed)
  • 60 ml (4 tablespoons) butter
  • 2 cloves of garlic, minced
  • 60 ml (4 tablespoons) maple syrup
  • 30 ml (2 tablespoons) white vinegar
  • 500 ml (2 cups) cooked Orzo pasta
  • Salt and pepper to taste

Preparation

STAGE 1

In a hot pot, fry the chicken and thyme in a little oil.

2ND STEP

Season with salt, pepper and deglaze with white wine.

STEP 3

Add the stock, carrots and simmer for 15 minutes.

STEP 4

Add the cornstarch, spinach, cream and simmer for 2 minutes. Check the seasoning.

STEP 5

Meanwhile, in a hot pot or pan, sauté the onion and peppers in the oil for 2 to 3 minutes.

STEP 6

Add the garlic, maple syrup, vinegar and simmer on low heat for 5 minutes. Check the seasoning.

STEP 7

Divide the chicken soup, caramelized onions and some cooked pasta into each bowl.
