RECIPE – Irish soup

For one person | 5 minute preparation | 20 minutes cooking | price 0.95 euros


  • 1 small leek (150g)
  • 20 g of butter
  • 80 g of rolled oats
  • 25 cl homemade broth (or 25 cl water + fennel wrappers)

The leek is peeled, cut very finely and placed in a water bath to rinse.

Melt half a stick of butter in a saucepan, add the leeks and sauté for a few minutes.

Add the rolled oats and stir into the butter. Pour the broth or water with a few fennel seeds into the pot. Simmer for 5 minutes on low heat, then season with salt and pepper.

Continue cooking for 5 minutes and transfer to a bowl.


Homemade broth
For homemade broth, keep the vegetable peels in a box in the refrigerator; when you need stock for a recipe, boil them for 10 minutes in a pot of water.

Reserve a few thinly sliced ​​rings for garnish.
