- 1 small leek (150g)
- 20 g of butter
- 80 g of rolled oats
- 25 cl homemade broth (or 25 cl water + fennel wrappers)
The leek is peeled, cut very finely and placed in a water bath to rinse.
Melt half a stick of butter in a saucepan, add the leeks and sauté for a few minutes.
Add the rolled oats and stir into the butter. Pour the broth or water with a few fennel seeds into the pot. Simmer for 5 minutes on low heat, then season with salt and pepper.
Continue cooking for 5 minutes and transfer to a bowl.
