Follow the preparation of the dish and the two soups that Elvira Masson prepared for us especially for Respirations week. On the menu: Kuku sabzi, which is an Iranian recipe and looks like a kind of herb omelette. Kuku sabzi, for 4 to 6 people – 10 to 13 personal points:
INGREDIENTS:
- 5 c. olive oil
- 1 bunch flat parsley
- 1 bunch coriander
- 1 bunch of dill
- Mint
- 1.5 tbsp. baking powder
- 1 C. teaspoon fleur de sel
- 1/2 tsp. ground turmeric coffee
- 4 turns of the pepper mill
- 1 C. flour
- 8 large eggs
- 50 g feta or ricotta
- 1 pinch of harissa or 1 pinch of ground red pepper
- 100 g of walnuts
- 100 g dried blueberries (or better, in Iranian grocery stores: barberry)
Coral lentil soup, for 4 people – 15 to 18 personal points:
INGREDIENTS:
- 1 onion
- 2 cloves of garlic
- 1.5 cm piece of ginger
- 2 tablespoons olive oil (or coconut oil)
- 1 pinch of red pepper
- 3 pinches of curry powder
- 2 pinches of turmeric powder
- 150 g of coral lentils
- 400 ml of tomato paste
- 400 ml of coconut milk
- A small handful of fresh coriander (leaves and stems)
- Salt
- Ground pepper
Pea soup, Romanesco cabbage, for 4 people – 2 to 4 points per person:
INGREDIENTS:
- 100 g of chopped peas
- 1/2 small Romanesco cabbage
- 2 cloves of garlic
- 1 small onion
- 1 C. ° C. cumin powder
- The juice of half an orange
- 3 tbsp. near the village of Zehtin
- 100 cl of water
- Salt pepper
