Your fridge is almost empty and you don’t know what to cook? Why not make a lentil dish for a change? This little seed is a legume that is a very good starch. Rich in protein and fiber, it’s also perfect for boosting your transit. Even better, it can be delicious if you know how to cook it. If you’re looking for ways to diversify your meals, lentils like quinoa are an excellent alternative for healthy eating on a budget. Here are 4 easy and inexpensive lentil recipes. You will have fun!
Mix salad, fries, lentils and cauliflower
For 4 people:
- 300 g of cauliflower florets
- 1 tablespoon sherry vinegar
- 3 tablespoons of olive oil
Rinse the lentils, pour them into a pot, then cover them with 3 times their volume of water and cook for about 20 minutes. Drain them. Wash the cauliflower florets and steam them for 10 minutes. Rinse and toss the salad. Fry the bacon quickly in a small frying pan without fat. Prepare the dressing. To do this, pour the vinegar into a bowl and mix with the salt and pepper, then whisk in the olive oil. Arrange the frisée, lentils, cauliflower florets and bacon on a large platter, drizzle with a little vinaigrette and serve the remaining sauce on the side. Have a nice lunch!

Lentil, bacon and thyme soup
For 6 people:
- 250 g of green lentils
- 1 can of peeled tomatoes
- 150 ml of olive oil
- 2 teaspoons of thyme
Put the lentils in a pot, cover with water and bring to a boil. Boil for 3 minutes, then drain. Peel and chop the onion. Dice the bacon and mince the garlic cloves. Wash, peel and cut the carrots into rings, then chop the celery. In a casserole or deep pot, heat some olive oil and fry the onion, bacon and garlic for 5 minutes. Add the remaining olive oil with the carrots, celery stick, tomatoes, thyme, lentils and water. Season to taste. Cover and cook for about 35 minutes, the lentils should be tender. Serve with a few cubes of bacon on top. Ready !

Dal lentils with coconut milk
For 3 people:
- 1 small can of coconut milk
- 200 g of coral lentils
- 3 small garlic cloves
- 2 tablespoons curry
- 1 teaspoon ginger powder
Boil the lentils in a pot of cold (unsalted) water until soft (10-15 minutes). Meanwhile, finely chop the onion and fry it in clarified butter or olive oil. Half cooked add the diced tomatoes and finely chopped garlic and your choice of finely chopped vegetables. Then add the spices. Everything is mixed, then the coconut milk is poured in, adding a little water if necessary (it should not boil!). Add the lentils and simmer for a few more minutes, adjusting the flavors. Have a nice lunch!

Bolognese with lentils
For 4 people:
- 1 large can of peeled tomatoes
Chop the onion and leek. Grate the carrot. Sweat everything in a pre-greased cast iron casserole dish. (7-8 minutes). Add the tomatoes, spices, white wine, salt and pepper and simmer for 3/4 hour. At the same time, boil the lentils to 90% (as indicated on the package). When the lentils are almost cooked, drain them and add them to the tomato sauce. Add a little water if necessary (it should be the consistency of meat bolognese). Simmer for another 5 to 10 minutes. Enjoy with spaghetti. Ready !
